Title: Linguine W/fresh Tomatoes

Yield: 4 Servings

1/2c+ 1 tb olive oil, divided
2tsSalt, divided
1lbLinguine
1tbDried basil
3clGarlic, minced
1/2tsBlack pepper
4lgRipe tomatoes, diced
1lb(4cups) shredded mozzarella
  Cheese
1/2cChicken stock
1/2 Red Bell pepper, diced
2tbGrated Parmesan cheese
  (optional)

Place 1 tb olive oil and 1 1/2 ts salt in a large pot of boiling water; add the linguine and cook until tender but still firm, 8-10 minutes. Drain, rinse with warm water, and drain again; set aside. Meanwhile, in a small saucepan, combine the basil, garlic, black pepper, the remaining 1/2 cup olive oil, and 1/2 ts salt. Warm over a low heat, stirring occasionally. In a large bowl, combine the tomatoes, mozzarella, and heated oil mixture. Add the warm linguine and toss with the tomato mixture, chicken stock, red pepper, and Parmesan cheese, if desired.
